A coconut snowball cake...


For the last two and a bit years we have been eating organic food, I guess our food intake is around 80% of what we eat is organic. I do try to home bake most days, so today I baked this lovely coconut cake, I baked with coconut oil like the recipe instructs. I have been cooking with coconut oil for around three years now but this was my first cake. The sponge was light, unlike sponges made with butter, which can make you feeling heavy after you have eaten it.
This icing was meringue based, which you whip in a bowel over simmering water in a pan.
The natives in the home gave me 10/10 so I guess I can stay another night ;) xx

My outdoor larder...


I call our garden my outdoor larder, just over a year ago I changed my gardening method to the " back to eden", after watching Paul Gautschi on youtube. To be honest after all the negativity that goes on in the media to watch this clever gentlemen comforts my anxious thoughts.

So I am now over a year into applying his method and the results so far have been amazing.
This evening I wanted a change from potato chips so I went into the garden and pulled up some parsnips. They were huge and normally this is a sign of them being woody but when I saw the creamy coloured skin I knew they would be ok...infact they were more than ok, they were oh so sweet!:)

I peeled and chipped them and poured olive oil over them with grated parmesan and then roasted in the oven.
Our parsley is still plentiful in the garden, it has sat through snow, frost and heavy rain but it is still growing and very green.
I have plenty of ideas for this year :)

Home life, family, cooking and another homemade cream cleaner, I put a sprig off rosemary from the garden in the jar to keep it scented. xx

Our new cooker...

I have known for some months our cooker was dying on me, then last week the oven temperature dropped so low I could not bake a cake!!

So I was forced to buy a new one online!!
What one do I buy? As I get older I have a love hate relationship with shopping.
Well eventually I found one or I believe it found me as I was browsing for something else when I come across this cooker.
I loved it, bought it.
It arrived today :) I have to say its very well built, a good heavy, sturdy cooker :)
Nice colour too!

I spend a lot of my time home baking , I  have a lovely recipe in the waiting for a noir chocolate gateau :)

Its getting windy outside tonight, feeling the autumn chill. Friday we have our wood burner flue cleaned, so we will be able to light a small fire when needed.
I love Autumn :)

My Elderberry cuttings...

This year in the village I picked lots of elderberries, I have read a lot about their  medicinal properties.
I took cuttings from the mother tree that was laden with the berries and was in the sun.
They have been on my kitchen windowsill for nearly two weeks, they are now showing growth, so, I will pot them up at the weekend and move them in the greenhouse, ready for planting in the garden in October :)

I ordered this book off Amazon for 1 pence and free delivery!!

Our sunday afternoon...

I can feel Autumn in the air, that slight chill. I really could of stayed at home today but having been home most of the week, I felt a little cabin fever!!

Our cooker died this week, I can still use the gas rings on top and the oven works but I could not get enough heat to bake a cake!! I have ordered a new one which will arrive Tuesday :) Our chimney gets swept on Friday so we will be able to light the wood burner.

So this afternoon we went for a walk in a lovely village on the outskirts of town, I spent many lovely times in this village as a child as my aunt and uncle live there :)

As we passed this delightful cottage, you could smell the roast beef dinner, it smelt mouth watering!!
I did not realise the kitchen door open until after I took the photo, I don't think they saw me ;)
We stopped for a drink in the local pub and there was an outdoor kitchen that they had recently built, its something we plan to build in our garden next year, it gave me room for thought :)
